Zucchini Relish

What is zucchini relish? I had never heard of anything besides pickle relish until last summer.  My hubby’s relatives had made some and it was so wonderful I had to get the recipe.  We recently finished up last year’s batch so it was time to make more.

For those who are interested in the recipe:

Phase 1:  Grind each in food processor- 10c zucchini (unpeeled), 4 1/2 c onion, 3 large green peppers, & 2 large red peppers.  Mix all together with 1c UNiodized salt and let it stand overnight.  (I forgot about it and let it be stand 1 1/2 days)

Phase 2:  Drain and wash until the water is clear and no longer salty.  Drain well.  In a large pot make the syrup: 2 1/2 c vinegar, 3 1/2 c sugar*, 1 tsp dry mustard, 2 tsp celery seed, & 2 tsp turmeric.  Bring this to a boil  Add the vegetables and boil for 15 minutes.  Put in sterilized jars.**

*If you prefer your relish to be sweeter the original recipe does call for 5 cups of sugar.

** I find that the heat seals the jars on its own but you could can them if you want.
